First, you set strategic goals for AI pricing, globally, or at the property or room/unit level.   These goals can be based on RevPar, Occupancy or price or a combination such as driving occupancy up to a certain level and then maximising RevPar.   You can also set guardrails by imposing standard minimum and maximum prices by room/unit category and only allowing AI to drop below the minimum in certain circumstances:  for example when your occupancy is very low and you need to get things going, but have enough time left before check-in to make this up.  The same applies to minimum stay restrctions where yuo can allow AI to break the rule and offer shorter stays to fill awkward gaps in your calendar.   In addition, you can define the most relevant local competitor set and a list of local events and their typical impact on booking levels.
